Three Easy Vegan Blender Soup Recipes to Try

 

In keeping with a recent theme where I discuss why vegans would want a blender, I decided to put together list of some of great vegan soups you can make.

These range from super easy and fast summer soups, to more involved warming soups that are great for the fall and winter.

 

What Type of Blenders Should Use Use?

A quick word about what type of blenders I’m discussing and then we’ll get right into the soups themselves.

There are a few different types of blenders on the market. I basically break them down into three categories.

Bullet Blenders

Jar Blenders

Stick Blender

For the sake of this article, I really only suggest you use the latter two to make soups. Stick blenders are my favorite when making soup. They are able to go right into the pot of soup (hence why they are called immersion blenders).

After immersion blenders, the other type of blender that you can use is called a jar blender. That’s the main type of blender that you see for sale, and it’s one that you can use to make soups as long as you understand the heat restrictions.

With an immersion blender, you’re putting the stick blender directly into the soup pot. These blenders are almost all designed to withstand heat. The stick part of the blender is designed to go into heat, and so in most case is metal.

When you are using a jar blender, it’s more important to get one that is heat resistant. Most jar blenders will tell you directly if you can use them to blend hot liquids. Many you can’t.

If you’re using a Vitamix or high end blender like BlendTec, then odds are you can. But if you’re using a Ninja, then you might need to let the soup cool down.

The reason I suggest not using a bullet blender is that they are too small. It’s fine if you are making a very small two serving soup, but in most cases bullet blenders can’t handle hot liquids, so I would just avoid making anything with them.

My pro tip for everyone who is reading this and wants to make blended soups is to simply buy an immersion blender. They aren’t too expensive, even if you end up buying a top of the line one. And they are super useful. You can make whipped cream for desserts or coffee, and also obviously make the soups listed here.

I don’t consider myself a recipe blog, so what I’m going to do is link to a bunch of recipes online that are good jumping off points. And of course you can always find good video tutorials online on places like YouTube.

 

Gazpacho- Cool for the Summertime

This is one of my favorite summer time soups. It’s so simple to make and it’s a bright and tasty meal for lunch or dinner.

Not only that, but because it’s cold…you can make it in a Ninja as well as the pricier Vitamix or BlendTec blenders.

It’s a simple blender mix of fresh tomatoes, bell peppers, vinegar, optional ingredients such as stale bread, olive oil, salt and a few other nice ingredients such as cucumber and optional garlic.

That’s it. If you’ve got those ingredients, then you have yourself a fantastic gazpacho.

Smooth and Creamy Coconut Ginger & Lentil

This is a fantastic recipe to make. While the original doesn’t require a blender, I do think that it’s much better with the blender.

I’m going to straight up suggest that you follow the famous Alison Roman recipe. You can view it online. The NY-Times, where she worked before the media tried to cancel her because she spoke about John Legend’s wife Chissy Tegean.

I’d just go right ahead and use her recipe and then adapt it as you like.

The basic recipe involves sauteing the onions, garlic, and ginger with other ingredients in a stockpot or saucepan and then simmering it with coconut milk.

If you have an immersion blender, you can blend it while it’s cooking, which I think makes

What I’d suggest you do is take the soup and let it cool slightly and then blend it up

Cold and Creamy Carrot Soup

My final suggestion is to make a great carrot soup. Carrot soup is super healthy and it’s also something that you don’t find that often in stores. Carrot soup’s sort of hard to get, so it’s a good vegan soup to make in your blender.

For this recipe, I would suggest that you use a blender that can blend hot liquid or an immersion blender.

A model such as a basic Ninja blender is great, but they are not really designed to handle hot soups.

So, what I would use is an immersion blender or a Vitamix.

Carrots take a while to cook down and you want them to be soft before you try and puree them.

A chunky carrot soup is good and hearty, but if you’re looking for a smooth and creamy carrot soup, then I would suggest that you really cook the carrots until they are very mushy.

Carrots are hard to blend up unless they are soft, so you want to wait until all of the ingredients are soft before blending up.

The carrots themselves can make the soup really creamy as long as you blend it up. So, my suggestions would be to cook the soup thoroughly  to completion and then blend it up using an immersion blender or else a blender that can handle hot liquids.
